Cooking Instructions

Thaw in the refrigerator. Sockeye is very lean, so use high heat and a short cook time. Pan Sear: Heat oil in a pan over high heat, cook skin-side down 3 to 4 min, turn and cook 1 to 2 min more. Roasting: Roast in a preheated oven at 425F for 8 to 10 min. Grill: Cook skin-side down over medium-high heat 6 to 8 min. Remove while the center is still slightly translucent.

Serving Suggestion

Deep-red wild sockeye: a quick, high-heat sear keeps it moist. Serve over greens with avocado, or flake into tacos with a lime slaw.
