Personal Gourmet lollipop lamb chops plated with mint and rosemary

Lamb chops are one of those dinners most families only order at a restaurant. They feel special, they cook fast, and they are surprisingly hard to find at the right quality in a regular supermarket case. If you have been searching for lamb chops delivery in Southern California, this guide explains the three lamb cuts we carry, how each one is best cooked, and how in-person freezer delivery differs from a box left on the porch.

Note: We are not the Philadelphia “Personal Gourmet” brand you may see in national search results. This is Personal Gourmet, Inc., the family-owned SoCal in-person freezer-delivery company, in business since 2001.

Three lamb cuts, three different dinners

“Lamb chops” can mean a few different cuts, and they do not cook or eat the same way. Here is what is on our lamb page right now:

  • Lollipop lamb chops are rib chops with the bone scraped clean, leaving a neat handle and a round eye of meat. They cook in minutes and are as good as a passed appetizer as they are on a dinner plate.
  • Porterhouse-cut lamb chops come from the loin. Our listing describes them as domestic spring lamb. Thicker and meatier than a rib chop, they are the “steak night” version of lamb.
  • Rack of lamb is eight rib chops still joined and frenched. You roast it whole, then carve between the bones, which keeps every chop rosy and makes a dinner party look effortless.

Lineups change with supply, so your Personal Gourmet specialist will confirm what is available when you plan your order.

Which lamb cut fits your table?

  • Weeknight, short on time: lollipops. Two to three minutes a side in a hot pan and they are done.
  • Grill night or a heartier plate: the porterhouse-cut chops. They hold up to direct heat and a longer rest.
  • Holidays, birthdays, or guests: rack of lamb. One sear, one roast, carved at the table.
  • Not sure your family likes lamb? Start with lollipops. They are mild, easy to eat by hand, and a low-risk way to introduce lamb to kids or skeptical relatives.

How to cook lamb chops from your freezer

Every lamb portion we deliver is individually vacuum-sealed and frozen, so you thaw only what you plan to cook. Thaw lamb in the refrigerator, or in a bowl of cold water in its sealed pack if you are short on time, then cook it right away. Never thaw on the counter. Our guide to how long frozen meat lasts covers thawing and freezer times in more detail.

Lollipop lamb chops

Pat dry and season. Heat oil in a pan over high heat and sear 2 to 3 minutes per side with garlic and rosemary. On the grill, use direct high heat for the same time. Rest 5 minutes. A spoonful of mint chimichurri on top is all they need.

Porterhouse-cut lamb chops

Grill over direct medium-high heat, or pan-sear and baste with butter, garlic, and rosemary, about 4 to 5 minutes per side. Rest 5 minutes before serving. Minted peas or a warm white-bean salad work well on the side.

Rack of lamb

Sear fat-side down in a hot oven-safe pan for about 3 minutes, brush with Dijon and press on an herb crust, then roast in a preheated 400°F oven for 20 to 25 minutes. Rest 10 minutes, then carve between the bones.

Doneness and food safety

Many cooks pull lamb at 130°F to 135°F for medium-rare. Federal food-safety guidance recommends cooking lamb chops, roasts, and steaks to 145°F with a 3-minute rest; see the safe minimum internal temperatures chart. An instant-read thermometer in the thickest part of the chop, away from the bone, takes the guessing out of it. Times for every other cut we carry are on our meat preparation chart.

Why freezer delivery works well for lamb

Lamb is a cut most families eat now and then, not every week. That is exactly why it suits a stocked freezer:

  • It is ready when the occasion is. A birthday, an anniversary, or last-minute guests no longer means a trip to a specialty butcher.
  • Sealed portions hold quality. Air is what causes freezer burn. Vacuum-sealed, individually packed portions keep it off the meat from the start, so the chops you cook in two months look like the ones you cooked last week.
  • No porch-box worries. Good lamb is too good to lose to the heat. A courier box sitting in the sun in Riverside or San Bernardino County in summer is a real risk. Our deliveries are hand-carried into your kitchen and loaded into your freezer with you.

What is the difference between lollipop lamb chops and regular lamb chops?

Lollipop chops are rib chops with the bone scraped clean so it works as a handle. They are small and cook in minutes. Porterhouse-cut lamb chops come from the loin and are thicker and meatier, more like a small steak.

What temperature should lamb chops be cooked to?

Federal food-safety guidance recommends 145°F with a 3-minute rest for lamb chops, steaks, and roasts. Use an instant-read thermometer in the thickest part, away from the bone.

How should I thaw frozen lamb chops?

Thaw in the refrigerator, or in cold water in the sealed pack if you are short on time. Cook lamb thawed in cold water right away. Do not thaw on the counter.
