Cool evenings in Southern California still call for something that cooks low and slow. If you searched short ribs delivery because you want restaurant-style braising beef already in the freezer — not a foam cooler on a sunny porch — this guide explains how we handle beef short ribs, how to cook them, and how in-person freezer delivery works across seven counties.
Personal Gourmet is a family-owned company (Personal Gourmet, Inc., since 2001) that hand-delivers restaurant-quality food into freezers across seven Southern California counties. No order minimums, no contracts, and pricing that is personal to what your household actually eats.
Note: We are not the Philadelphia “Personal Gourmet” brand that sometimes appears in national search results. This page is about our SoCal in-person freezer service.
Short ribs on the live lineup
Our beef short ribs sit with the rest of our beef selections — the cut you braise until the meat pulls from the bone. Confirm the current pack and personal pricing with a specialist. We do not post a public price sheet, and offerings can change.
Like everything we carry, short ribs arrive vacuum-sealed and frozen, so they can wait until the weekend you actually want to cook.
Short ribs vs baby backs vs a roast
Beef short ribs are a braising cut from the chuck or plate area: rich, collagen-heavy, and best cooked with time and moisture. They are not the same as pork baby back ribs (a different animal and a different cook), and they are not a holiday prime rib roast. If your table wants a sliced roast centerpiece, prime rib or chateaubriand is the usual path. If you want sticky pork ribs instead, ask about our fully cooked baby backs.
A mixed freezer often carries both a braise cut and a fast steak. Short ribs cover Sunday dinner. Ribeye or filet mignon covers a weeknight for two.
Why short ribs belong in the freezer early
- Braising night is planned. Short ribs want hours in the oven or slow cooker. Having them frozen means you pick the thaw day, not a carrier window.
- No porch gamble. National shippers send foam coolers by carrier. That is fine if someone is home to unpack. It is a risk when the box sits in the sun. The USDA’s mail-order food safety guidance explains why that matters.
- Comfort food without the hunt. Butcher cases thin out before holidays and rainy weekends. A pack already in your freezer takes that off the list.
How to thaw and cook short ribs
Thaw vacuum-sealed short ribs in the refrigerator, not on the counter. The USDA’s safe defrosting guide is the reference for fridge thaw timing.
Classic approach: brown the ribs, then braise covered with broth, wine or aromatics until fork-tender — often three hours or more in a moderate oven, or longer on low in a slow cooker. Our meat preparation chart has more cooking guidance.
A few tips that save the day:
- For safety, whole cuts of beef should reach at least 145°F with a three-minute rest per the federal safe minimum internal temperature chart. Braised short ribs are usually cooked well past that until collagen softens.
- Skim fat from the braising liquid and reduce it for a sauce, or chill overnight and lift the solid fat before reheating.
- Leftovers reheat gently in their sauce. Refrigerate within two hours of serving.
Free in-person delivery across seven counties
We deliver free across Santa Barbara, Ventura, Los Angeles, Orange, San Bernardino, Riverside and San Diego counties, seven days a week, with morning, afternoon or evening windows. A person walks your order into the kitchen and loads the freezer. See the service area page, or the local pages for Orange County and Riverside.
Outside Southern California, we can talk about nationwide shipping with shipping and handling. That is a different product from free local freezer delivery.

Short ribs delivery FAQ
Do you carry beef short ribs right now?
Ask a specialist for the current lineup. Live beef selections change; we confirm availability and personal pricing before you order.
Are short ribs the same as baby back ribs?
No. Beef short ribs are a braising cut. Pork baby backs are a different product with a different cook. Tell us which table you are planning.
Do you publish short ribs prices online?
No. Pricing is personal to your order. Call or request a consultation for current numbers — we never post a public price list.
Is delivery really into the freezer?
Yes, across our seven SoCal counties: a person hand-loads your freezer. That is the service this page is about.
Can I mix short ribs with steaks and seafood?
Yes. Most households build a mixed freezer. No minimums and no contracts.
