Cooking Instructions
Thaw in the refrigerator. Roasting: Roast skin-side up in a preheated oven at 425F for 35 to 40 min until the skin is crisp. Grill: Cook over indirect medium heat for 30 to 35 min, turning once. Broiling: Broil 6 in. from heat for 12 to 15 min per side. Cook to an internal temperature of 165F, then rest 5 min.
Serving Suggestion
Roast at 425F with lemon, garlic, and thyme until the skin crackles - the bone keeps the meat remarkably juicy. Wonderful with root vegetables roasted in the same pan.
