Baking: Preheat oven to 350º and place fish on baking pan. Brush with butter and bake for 10 min.
Broiling: Preheat broiler and place sole in dish 3” to 4” from heat source. Brush with butter and broil for 8 to 10 min.
Filet of Sole Almondine:
3 teaspoons margarine
½ oz. silver almonds
2 Personal Gourmet sole filets
2 teaspoons flour
1 teaspoon fresh lemon juice
1/8 teaspoon salt
Lemon wedges and parsley sprigs
In skillet heat 1 teaspoon margarine until bubbly and hog; add almonds and sauté until golden. Remove almonds from skillet and set aside. In small bowl combine flour, salt, and pepper; sprinkle both sides of each filet with an equal amount of seasoned flour. In same skillet heat remaining 2 teaspoons margarine over medium heat until bubbly and hot; add fish and cook until golden brown. Carefully turn filets over and cook until other side is browned and fish flakes easily when tested with a fork; remove to a serving platter. Reduce heat to low; add lemon juice and sautéed almonds to skillet and cook over low heat, stirring until heated. Top filets with almond mixture; garnish with lemon wedges and parsley. Serves 2.
