Baking: Rub roast with salt and pepper; place fat side up, on a rack in a roasting pan. If using a meat thermometer, insert bulb into the center of the meat. Preheat the oven to 325º. Roast about 1 hour and 10 min. for rare meat (140º); 1 hour and 30 min. for medium (160º). Place roast on a cutting board, allow to stand for 15 min. for easier carving.
