Meat Preparation Chart
Personal Gourmet’s Meatloaf Divine:
3/4 cup of milk
1/2 cup of fine dry bread crumbs
1/4 cup of finely chopped onion
2 tablespoons of chopped parsley
1 teaspoon of salt
1/4 cup of ketchup
1 1/2 lbs Personal Gourmet chopped sirloin
1/2 teaspoon ground sage
2 tablespoons of brown sugar
1 teaspoon of dry mustard
Combine eggs and milk; stir in crumbs, onion, parsley, salt, sage and 1/8 teaspoon pepper. Add beef, mix well. Pat into a 5-1/2 cup ring mold; un-mold in a shallow baking pan. Bake in a 350º oven for about 50 minutes or to 170º. (or, pat mixture into an 8x4x2-inch loaf pan; bake for 1-1/4 hours). Spoon of fat. Combine ketchup, sugar and mustard; spread over meat. Return to oven for 10 minutes. Serves 6.
Pepare meat as for oven, except pat into a 5-1/2 cup ring mold and invert into a 9” or 10” non-metal pie plate; remove mold. (Do not use a loaf pan). Cover with waxed paper. Cook in a microwave oven on high power 12 to 13 minutes or to 170º; give dish a quarter turn every three minutes. Spoon off excess fat, combine ketchup, sugar, and mustard; spread over meat. Let stand for 5 minutes then transfer to a platter
