Cooking Instructions:
Baking: Preheat oven at 400º. Separate meat from shell allowing tail portion to remain attached. Place meat on top of shell “piggy-back” style and brush with butter, garlic and lemon juice or white wine. Then sprinkle with paprika if desired. Pour small amount of water into baking pan. Place tails in pan and bake for about 20 minutes. As soon as meat turns white, tails are done.
Stove-top: Bring 2 quarts of water to boil in large saucepan. Remove plastic wrap from frozen tails and place in boiling water. Return to boiling point, reduce heat to a simmer and cook tails for 12 -15 min. until meat is opaque in color. Drain tails. To serve in shell, remove underside membrane by cut-ting along each side of tail, pull to remove membrane. To remove from shell, cut away underside membrane and insert fingers between shell and meat at heavy end and work meat loose from shell. Serve with melt-ed butter if desired.
Broil: Thaw lobster in the refrigerator. Preheat broiler and position top rack 3–4 inches from broiler. Using scissors cut the membrane covering the underside of the tails and remove. Cut the meat and the shell of
each tail in half lengthwise with a sharp heavy knife or to butterfly, cut tails down through middle of hard shell with a sharp knife. Cut through flesh but not underside membrane. Hold tail in both hands and open flat, butterfly style. Brush lightly with melted butter or olive oil. Place lobster tails on broiling pan, shell side down. Place under broiler and broil for 6 - 7 min. until meat is opaque in color.
Grill: Thaw lobster in the refrigerator. Preheat grill to medium. Butterfly tails by cutting down through middle of hard shell with a sharp knife. Cut through flesh but not under-side membrane. Hold tail in both hands and open flat. Brush lightly with melted butter or olive oil. Place flesh side down on grill and cook for 7 - 9 min, flipping when necessary if flare up occurs.
